Tom yum is one of those dishes that people either know well or have never tried. Either way, this is a good place to start.
Tom yum is a Thai soup built on a base of lemongrass, galangal, kaffir lime leaves and fresh chilli. It’s sour, spicy and aromatic in a way that’s hard to compare to anything else. In Thailand it’s eaten at any time of day, as a starter or a full meal with noodles. The clear version, Nam Sai, is lighter and sharper. The creamy version, Nam Khon, is richer, coconut milk rounds out the heat without killing it.

The Tom Yum Nam Sai (€17.50) is rice noodles in a clear broth, spicy and herbal. The creamy version comes with shrimp or seafood (both €20.95), same heat, fuller body. If you want something a bit different, the Tom Yum Fire Fried Rice with seafood (€19.95) takes the same flavour profile into a wok dish.
